Step by Step Procedure
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the minced garlic and chopped onion. Sauté for about 2-3 minutes until the onion becomes translucent and aromatic.
Push the onion and garlic to the side of the pan, making space for the eggs. Pour the beaten eggs into the space and scramble them until they are fully cooked and slightly browned.
Add the mixed vegetables to the skillet and stir-fry for about 3-4 minutes until they are tender.
Stir in the cold, cooked rice. Break up any clumps and mix it thoroughly with the vegetables and eggs.
Pour the soy sauce, oyster sauce, and sesame oil over the rice mixture. Stir well to evenly coat the rice and vegetables. If desired, add salt and pepper to taste.
Continue to stir-fry for an additional 5-7 minutes until everything is heated through, and the rice starts to turn slightly crispy.
Taste and adjust the seasoning if needed.
Garnish with chopped green onions for added flavor and color.
