Ingredients

  • Spaghetti – 500g

  • Golden Terra Soya Oil – ¼ cup
  • Terra Seasoning Cube 
  • Scotch Bonnet (Ata Rodo) – 1 piece (blended or chopped, optional for extra heat)
  • Fresh Tomatoes – 3 medium-sized (blended)
  • Green Bell Pepper – 1 medium-sized (diced)
  • Onion – 1 large (diced)
  • Garlic – 2 cloves (minced)
  • Ginger – 1 teaspoon (grated)
  • Thyme – 1 teaspoon
  • Curry Powder – 1 teaspoon
  • Mixed Vegetables (Carrot, Peas, Sweet Corn) – 1 cup (optional)
  • Parmesan Cheese or Local Cheese (optional, for garnish)
  • Salt – to taste
  • Water – as needed

Step-by-Step Procedure

  1. Bring a pot of salted water to a boil, then add the spaghetti. Cook until al dente, according to the package instructions. Drain and set aside.
  2. Heat Golden Terra Soya Oil in a large pan over medium heat. Sauté the diced onions, minced garlic, and grated ginger until fragrant.
  3. Add Peppe Terra Cooking Paste, blended fresh tomatoes, and scotch bonnet (if using). Cook for 10 minutes until the sauce thickens and the oil begins to float.
  4. Stir in the Terra Seasoning Cube, thyme, curry powder, and salt. If necessary, adjust the spice level with some water.
