Ingredients

  • Peppe Terra Cooking Paste – 1 180g Doy Pack or 3 55g Sachets
  • Palm Oil or Vegetable Oil – (choose based on preference)
  • Tomatoes – 4 medium-sized (blended)
  • Onion – 1 large-sized (sliced)
  • Scotch Bonnet (Ata Rodo) – 2 pieces (blended)
  • Terra Seasoning Cube
  • Garlic – 1 clove (minced)
  • Ginger – 1 teaspoon (grated)
  • Bay Leaves – 2 leaves
  • Thyme – 1 teaspoon
  • Chicken or Beef Stock – 2 cups
  • Protein of Choice – Grilled or fried chicken, beef, or fish
  • Salt – to taste

Step-by-Step Procedure

  1. Heat your oil of choice in a large pot over medium heat. Add sliced onions and sauté until soft and aromatic.
  2. Stir in the Peppe Terra Cooking Paste, blended fresh tomatoes, red bell pepper, and scotch bonnet. Fry the mixture for 10-15 minutes, stirring occasionally, until the oil starts to separate.
  3. Add Terra Seasoning Cubes, grated ginger, minced garlic, thyme, and bay leaves. Stir well to combine the spices.
  4. Introduce your fried or pre-cooked protein (chicken, beef, goat meat, or fish) into the pot. Pour in the chicken or beef stock, mix well, and allow to simmer for another 10-15 minutes.
  5. Taste the stew and adjust salt or seasoning as needed. If the stew is too thick, add a little water or stock to achieve the desired consistency.
  6. Reduce the heat and let the stew simmer for an additional 5 minutes, allowing all the flavors to meld together.
