Yam Porridge

A Creamy and Flavorful Comfort Food!

Enjoy the comforting taste of Yam Porridge Delight, a rich and hearty dish made with soft yam chunks simmered in a flavorful blend of Peppe Terra Cooking Paste and spices. This satisfying one-pot meal is perfect for everyday family dinners or a special treat for guests.

Ingredients

  • Yam – 1 medium-sized tuber (peeled and cut into cubes)
  • Peppe Terra Cooking Paste 
  • Palm Oil
  • Terra Seasoning Cube
  • Onion – 1 medium-sized (chopped)
  • Crayfish – 2 tablespoons (blended)
  • Scotch Bonnet (Ata Rodo) – 1 piece (blended or diced, optional for spice)
  • Smoked Fish or Mackerel – (deboned)
  • Spinach or Ugu (Fluted Pumpkin Leaves) – (washed and chopped)
  • Salt – to taste
  • Water – 3 cups

Step-by-Step Procedure

  1. Heat palm oil in a large pot over medium heat. Sauté the chopped onions until fragrant.
  2. Add Peppe Terra Cooking Paste and scotch bonnet (if using). Stir and let it cook for 8-10 minutes, allowing the flavours to cook.
  3. Pour in 3 cups of water and add the yam cubes. Stir gently to combine. Cover and allow the yam to cook on medium heat for about 20 minutes or until tender.
  4. Add the smoked fish, Terra Seasoning Cube, blended crayfish, and salt. Stir well and continue cooking for another 5 minutes.
  5. Using a wooden spoon or ladle, gently mash some of the yam cubes in the pot to thicken the porridge. Be careful not to mash everything—leave some chunks for texture.
  6. Stir in the chopped spinach or ugu and cook for an additional 2-3 minutes to preserve the fresh green colour.
  7. Adjust seasoning as needed. Turn off the heat and allow the flavours to settle for a few minutes before serving.

Chef's Tips

  • To make it a bit extra, use dried fish or stockfish in addition to smoked fish or mackerel.
  • For a pop of colour and added sweetness, include diced carrots or sweet peppers.
  • Adjust the consistency by adding more water if the porridge is too thick.
  • Let the palm oil cook fully with the onions and Peppe Terra Cooking Paste for an aromatic base.
  • Serve with fried plantains or grilled protein for a wholesome meal.
